In the preparation for the official launch of Ito-waygu beef on BenMart, product demostration was held at a high-end japanese restaurant, Hide Yamamoto at Marina Bay Sands.

This private event started with product presentation from Mr Katsunori Kudo, representative from ITOHAM japan. He covers from short introduction of his company & farm, cows selection, beef grading and cutting.

Generally, the wagyu beef grading consist of Yield Grade and Quality Grade. Please refer to following chart for better understanding.

After the presentation & discussion session, we are invited to the teppanyaki counter where the top chefs from Hide Yamamoto were preparing the waygu beef for evaluation. Besides the popular teppanyaki steak, Hide chefs also prepare some creative dishes like waygu beef carpaccio and beef sashimi with ponzu sauce.
