<COOKING & PREPARATION>

Thawing: For the best texture and flavor, thaw the lamb leg in the refrigerator for 24-48 hours before cooking. If you’re short on time, you can also defrost it in cold water (sealed in a plastic bag) for 2-3 hours but avoid using a microwave to thaw as it can affect the meat’s quality.

Seasoning: Once thawed, remove the lamb from the packaging and pat it dry with paper towels. Rub the leg with olive oil, garlic, rosemary, thyme, salt, and pepper. You can also add a splash of lemon juice or balsamic vinegar for extra flavor. Let the lamb sit at room temperature for 30-45 minutes to ensure even cooking.

Cooking (Roasting Method):

Preheat your oven to 375°F (190°C).

Place the seasoned lamb leg on a rack in a roasting pan, bone-side down.

Roast for approximately 20-25 minutes per pound, depending on your preferred level of doneness (about 1.5-2 hours for a 4-pound leg). For medium-rare, aim for an internal temperature of 135°F (57°C); for medium, 145°F (63°C).

Baste the lamb every 30 minutes to keep it moist.

Resting: Once the lamb leg reaches the desired temperature, remove it from the oven and cover loosely with foil. Let it rest for 10-15 minutes before carving to allow the juices to redistribute.

Serving: Slice the lamb leg against the grain and serve with your favorite sides. Enjoy the rich, tender meat with roasted vegetables, potatoes, or a fresh salad.

Note: If you prefer grilling or slow-cooking, adjust the method, accordingly, ensuring the lamb is cooked slowly to retain its juiciness.
